I'm not a super fan of peanut butter and especially peanut butter cookies. Peanut butter fanatics surround me so I needed to make my recipe irresistible. This recipe is all of that, with undertones of ginger, bourbon, and nutmeg but the brittle is what makes the sweet and salty pockets of sugar. I usually only have all natural peanut butter (oil on the top) on hand but for these cookies you need that extra sugar and palm oil that Jiff and Skippy have.
